This is a product that I can easily say is my favorite sauce. Frank’s Sweet Chili sauce is a perfect mix of sweet and hot. This sauce has been a regular grocery list item since it came out. For the most part we use it on chicken, but I have been experimenting a little lately with other recipes. For this post though I made my favorite basic chicken and rice. It is so easy and something even the kids will love. The heat level is mild and it can be made with any stir fry veggies you choose to use. I like it made with peppers and onions. Carrots would be a fantastic addition!
What you need:
1 tablespoon Olive Oil
2 Boneless Skinless Chicken Breasts, Diced or Cut into Medallions
1 Small Yellow Onion
1 each Small Red & Yellow Bell Pepper
Green Onions
1/2 Cup of Water
1 tsp. garlic
1 tsp. ginger (optional)
1 Jar of Frank’s Sweet Chili Sauce
Salt & Pepper to taste
2 Cups Cooked White RiceWhat to do:
Saute the chicken, onion and garlic in the olive oil until partially cooked.
Add the 1/2 cup of water, ginger, and half the jar of sweet chili sauce. Stir well. Bring to boil, reduce and simmer on low for 10 minutes.
Sauce should be slightly thickened.
Slice the peppers and green onion, add and cook for about 5 minutes. Do not over cook. You want the peppers to keep texture and color.
Spoon over white rice, garnish with green onion.
Salt & Pepper to taste.

Made this last night and everybody loved it! I added pineapple chunks and thought it made a nice addition to the sweet side of the recipe. Will definitely make again!
