What We Thought

I’ve never really been intimidated by a kitchen product in my life until this Instant Pot came into my life. I admit that I was quite nervous to even unbox it and I don’t know why. I was so excited but the recipes I had seen online just made me anxious. The day I unboxed and used this Instant Pot was a total life changer.

Unboxing was super simple. I washed up the pot and prepared myself (after some prodding by a good friend) to make some hard boiled eggs. I started with 5 large eggs from the grocery store and in literal minutes I had boiled eggs. This alone changed the way we do things here because I was able to make eggs for our oldest who is obsessed with them and they peeled easier than any egg I have ever peeled. I could now keep boiled eggs on hand without the trouble of making them on the stove and then having them look like the great egg massacre had occurred while peeling them.

 

Next I got a little more brave– Red Beans & Rice. This is a staple in our house and I wanted to take my recipe which usually took nearly the entire day (I would start them in the slow cooker early in the morning and cook until dinner time) and cut the time down in a drastic way.

 

I will start by saying I didn’t soak my beans and wish that I would have. This would have made them even more tender than they were. I am highly impressed that a nearly all day process took a mere 60 minutes from start to finish meaning the slicing of everything and cooking time included. A world of difference.

 

After using the Ultra Mini 3 qt I admit to heading to the store and buying an 8qt as well. I wanted to take our Instant Pot meals to another level and make bigger meals for our entire family plus make cooking for a crowd easier when we have company. People know when they come to our house they are coming to eat.

Product Review Cafe Red Beans & Rice

1- lb Kidney Beans (any brand will do– I prefer Goya)

1 lb Kielbasa (some people like to use Andouille but with small kids I keep the spice at a minimum)

8 oz Country Ham (I know a lot of people can’t get this, but it is popular here in the southern states)

2 stalks celery chopped

1 green pepper chopped

 

Chop Kielbasa and country ham and add into Instant Pot with all other ingredients and 5 cups of water.

Bean setting for 45 minutes.

 

I serve this over rice which I prepare in the microwave but others like to put the cooked rice in with their beans and meat mixture. Totally your choice.
