What We Thought

I will begin this post by saying I have never had Korean food in my life. I am a small town Virginia girl who really gets into the comfort foods, soul food and had just never gotten the opportunity to try anything Korean before. I was ready for the task of creating a recipe that was easy to make but also satisfying for my entire family.

Enter in KPOP Foods and great Korean sauces and snacks delivered right to our door.

I instantly thought bbq and cole slaw for the sauces. I had a local Boston butt and thought it would be perfect for the actual pork portion of the BBQ, but how would I cook it? I had several options and knew the grill was out because it was COLD! The Crock Pot would take a long time to cook the meat enough to eat and then the last option was the Instant Pot. As seen in other reviews I have become quite obsessed with this appliance and love it!

The KPOP Sauce was added into the Instant Pot with about a cup of water to create a thinner BBQ sauce so that the meat could more less marinate while cooking.  I tossed in the Boston Butt and it cooked for about 60 minutes. This piece of meat was a little on the tough side and I did check it at 45 minutes as suggested but it just wasn’t done yet. I natural released the meat at the end of both cooking sessions by the way for my IP loving followers.

Here is the finished product which I cut into thin strips instead of pulling like traditional bbq. (Thanks Mom & Dad for the beautiful plates.. We literally use these Fiesta plates every day and have for over a year now!!)

 

As for the cole slaw because here in the south you can’t have bbq without it I combined the Kimchi Mayo with some already shredded cabbage/carrots from Aldi. Added a little bit of sugar and some black pepper. It was that simple. The flavor was really amazing! Tossed this in the fridge to chill a bit before dinner and here is a photo:

Maybe a little more saucy than some people prefer, but my husband dove in!

 

A whole meal made in an hour and ready to eat. My kids ate the bbq up and we were all really impressed.
