Gourmet Sauces from Terrapin Ridge Farms- Review

The good people of Terrapin Ridge Farms are producers of  gourmet specialty sauces, dips, condiments and more. I was so excited to find this store online, specialty food stores are my favorite.  When we travel or shop the outlet malls in our area, this type of shop is the first place I go.

What makes Terrapin Ridge stand out is their unique flavor combinations and high quality ingredients. I noticed the salsas were hearty with big chunks of vegetables and the Dulce De Leche was smooth and sweet!

Lets take a look at what I received and how we used them :

Tart Cherry Apple & Rosemary Glaze
Peach Honey Mustard Pretzel Dip
Creamy Horseradish Dip

Roasted Garlic & Poblano Salsa
Dulce De Leche (my favorite)
The Tart Cherry Apple & Rosemary Glaze

This glaze is a great mix of sweet & savory and would pair well I think with any pork or chicken, maybe even turkey.  I used it to glaze a ham.  The sauce is thin (as a glaze should be)   it is not thick like a BBQ sauce so I recommend that you brush it on as you cook.  It caramelized beautifully and was so delicious.    The sauce is a perfect balance of sweet & tangy.

The next day we used the Terrapin Peach Honey Mustard dip spread on wheat bread with left over ham as a sandwich.

 The Roasted Garlic & Poblano Salsa and Sweet 

The Sweet Heat Salsa gets its name from being a mix of fruit, honey and traditional salsa vegetables like tomato and onions.  I was not sure if I would like this salsa because I like mine to be spicy and savory. The sweetness was not over bearing and was a great addition!  The picture to the left shows my favorite way to have salsa!

 

The Roasted Garlic and Poblano Salsa is a really hearty salsa, with chunks of tomato, peppers, onions and corn.  If you are not familiar with Poblanos, they are a type of chili pepper but are usually mild, occasionally you may come across a spicy one !    We used this salsa to make chicken taco lasagna!

Basically, all you do is layer your shredded cooked chicken (seasoned with a taco seasoning packet) between soft tortillas with shredded taco cheese, salsa and taco or enchilada sauce.   Bake on 350 for 30mins.     Top with shredded lettuce, diced tomato and sour cream, cut and serve.

 The Creamy Horseradish Dip

WOAH baby, this was the best taste testing I have done yet !  🙂

So I have always made hubby and I steak & cheese subs at home by using lean roast beef, low fat american cheese with cooked onions.  Usually I use a wheat sub roll,  but we only had white.

Buy a pound of lean roast beef from the deli, have them slice it so thin that it is almost falling apart , but not shaved (shaved would be too mushy).  I noticed Roast Beef is really expensive right now, ours was $8.99 lb, but this will make 4-5 subs so that is less than ordering out.

Saute the roast beef in a hot pan with thin sliced onions & a tablespoon of olive oil for about 5-7 mins.   What I do is separate the meat into portions in the pan, add cheese on top to melt and then lay the sliced roll cut side down on top of it.  This will steam the roll lightly  🙂 Slide a spatula under the meat holding the bun on top and flip it over, use the spatula sides to kinda tuck everything down in.   ENJOY!

We served these with the Horseradish sauce on the side.  What I like about this sauce is that it is really thick, creamy and not overly strong. I do love horseradish , but it can be very over powering sometimes. It is a perfect blend in this sauce and I have also been using it to dip carrots!

 The Dulce De Leche Sauce 

What is Dulce De Leche?     Well, it is heaven.

But really,  its name means  “milk candy”  or refers to a milk caramel, which is when a slow cooked sweetened (usually with white sugar, but you can use brown) milk cooks down until it is dark and thick.

My favorite snack ever, especially in fall is apples & caramel. We had just picked apples from our local orchard, so what better way to have them than with the Dulce De Leche !

I also used this sauce to drizzle over a homemade pumpkin pie and over my homemade applesauce cake!

If you have not noticed already,  I love to cook.  It has hard for me to describe in words how fabulous these products are, but believe me…  they are fantastic.
